So I am really working through these resolutions – I am getting closer to accepting tofu into my life. Mike just discovered that he liked it earlier this week, before I had warmed up to it, and found a recipe that brought me closer. He doesn’t remember where he got the recipe (he googled “bread crumbs” and “tofu”), but this one is the closest I could find.
Here is what he did:
Slice the tofu
Put it in cold water
Roll it around in the bread crumbs
Put it in the pan with olive oil

That’s it!
These pictures are not good because they were taken with my phone. I was so starving when I got home last night at 8:30 that I could not wait for my camera to charge- the food would have been gone.

He made it with wheat pasta so it was even healthier. I think I could tolerate it because it almost reminded me of fried mozzarella- obviously not as good, but I could eat it.

Oooh, keep the tofu ideas coming. I have yet to add it into my vegetarian lifestyle, but probably should get that figured out at some point, eh?

Huh! That’s really interesting! I think the only time I have even tried tofu was one time at P.F. Changs and my vegetarian friend wanted me to check it out. I might have to try it again, huh?

hmm…on the fly i would suggest taking the tofu, stuffing in a
nice filet and wrapping the filet in bacon. voila, dinner.
Ok. Tofu is not exactly seacoast, but it we like to make it at home sometimes. A great recipe is baked tofu from the Sundays at Moosewood Restaurant cookbook. They have a number of Asian inspired tofu from the Chinese section of the book. Simple to make, delicious. I often see copies in used book stores and would highly recommend.
This sounds great – I don’t make tofu nearly enough, I do enjoy it though.
