Pupusas date back 3,000 years. They are thick, hand-made corn tortillas stuffed with cheese, beans or meat and they originated in El Salvador..The typical toppings tend to be tomato sauce and cabbage.
One night Sue and I picked them up at a pupusería where we were able to watch them be made from scratch as we sat on a picnic table drinking a local beer.
They are meant to be eaten with your hands. It is amazing how much can be fit into those little discs that reminded me of silver dollar pancakes filled with savory ingredients.
